21 Acres Cooking Class: Simply Sensational French Cooking

Joyeux Noel (Happy Holidays) from Chef Cody Castiglia and the culinary education team! The art of French cuisine is often thought of as time-intensive and full of intimidating culinary techniques. Let Chef Cody debunk those common myths as he guides you through simple, yet elegant, recipes that will impress any of your holiday guests. The hands-on menu will feature the finest seasonal ingredients from small family farms right in our valley. Recipes will include, Cherry Valley Dairy brie-style cheese baked in cast iron with truffle honey, local apples, bread and jam. White bean cassoulet featuring local beans from Alverez Farms and vegetables, and “Northwest Nicose” Salad with greens, smoked salmon, baby potatoes, house-made capers, farm-fresh eggs, and Dijon herb vinaigrette. Vegetarian with seafood, wheat, dairy optional.
