Della Terra | Stuffed Pasta Workshop

Explore filled pastas from the northern regions of Italy in this seasonally inspired hands on pasta class with Chef Abby Canfield!
You will learn how to make a basic pasta dough, using locally sourced flour. Then use the dough to create a variety of fill-able pasta shapes. You’ll then go on to make a variety of filling and sauces using fresh seasonal ingredients. As an added bonus we will make ricotta in class for use in our dishes!
With wheat, eggs, dairy and meat optional.
On the Menu:
Butternut Squash Ravioli with brown butter walnuts and ricotta
Tortellini en Brodo – ricotta and greens stuffed tortellini in parmesan broth
Piemontese Agnolotti del Plin – traditional pork, rabbit, and rice stuffed agnolotti sauteed with butter and sage

We source the majority of our ingredients from within the community from local farms and producers, many of which are located just down the road in Snohomish.
